i mostly play on creative but these r some of the things i like to do :

Zoos/Aquariums
Pixel art
Rollercoasters
cool houses i see in youtube

you can try making your own advancements/achievements to complete, such as getting one of each color cat, collecting every type of block (that is available in peaceful), dying full sets of leather armor every base dye color, etc!

pinterest is also a good place to find inspiration for builds
